Properties and stability
Basic properties
Sodium diacetate is a molecular compound of sodium acetate and acetic acid, associated by short hydrogen bonds. White hygroscopic crystalline powder, non-toxic, with an acetic acid smell, easily soluble in water (1g/ml) and ethanol. It decomposes when heated to above 1500°C, emitting smoke and a pungent sour smell. The pH value of the aqueous solution is 4.5-5.0 (10% aqueous solution).

Purpose
1. Sodium diacetate is a multifunctional food chemical. It is mainly used as a preservative, antifungal agent, chelating agent, flavoring agent, pH regulator, and preservative for meat products in the food and feed industry. It is also the main ingredient of compound antifungal agents
2.This product can be mixed with other flavorings and sweeteners. It is used as a sour agent for food, an antifungal agent and a food quality improver. It is widely used as an anti-mold additive in food, feed, grains and silage (mainly used to prevent mildew, preserve freshness and improve nutritional value). In the printing and dyeing industry, it is used as acidifier, leveling agent, buffering agent, sequestering agent, rust inhibitor and antifungal agent for bread.
